I do not understand the categories you put in your message because I do not speak German, however I believe that this categorization is quite useless from the point of view of a service designer. I found much more menaingful the categorisation between business oriente services and public services, which is very broad, I know, but introduces the question whether designing business oriented services or public services requires a different strategic or methodological approach.
From a methodological perspective I also find relevant a categorisation of methodologies for a) analysis (ethnographic, sociological studies, marketing techniques, etc)
b)design and organisation of the service (use cases, scenarios)
c)reppresentation and communication (blueprinting techniques, new representation techniques)
